the soup season

There’s not much to be said for this time of year – the weather’s mostly grey and miserable: Christmas is just a memory and those few extra pounds, Easter’s a long way away. Soup helps to make it all a bit more bearable – and today’s is vegetable and bean. Warm, comforting and packed with nutrients. There are lots of recipes and this is mine: it makes about eight servings. We had it for lunch yesterday and Super Girl and Boy Wonder have taken it in their flasks today (thing is – I can’t remember if I packed spoons!)

1 kg winter vegetables (I got one of those packs from the supermarket, it had 2 onions, 3 carrots, 1 parsnip and half a swede.) Soften all the veg in a little olive oil, and add one can of chopped tomatoes and 1.5 litres of vegetable stock. Simmer for half an hour or so until all the vegetables are soft, then blitz. Add in a packet of Creative Cooks mediterranean bean mix and a tin of flageolet beans and warm through.
